After winter pruning while the grapevines are dormant, in the spring new growth emerges from the buds. As the vines continue to grow for about a month they produce flower clusters. And, if successfully pollinated, the flowers will develop into fruit sets. In the summer, the vine shoots mature, change color and ripen. Finally, in the fall, once the grapes are ripened, they are harvested, pressed, fermented, clarified, then bottled and aged.
